Ingredients:

           

●     230g Bad Hunter Lemon & Herb plant-based chicken strips (available in the frozen section of Woolworths)

●     2 tablespoons fresh chopped parsley

●     2 teaspoons dried basil

●     1 teaspoon dried oregano

●     4 cups Romaine lettuce, washed and dried

●     1 large cucumber, diced

●     2 Roma tomatoes, diced

●     1 red onion, sliced

●     1 avocado, sliced

●     1/3 cup pitted Kalamata olives, sliced

●     2 tablespoons olive oil

●     2 teaspoons garlic, minced

●     2 tablespoons water

●     2 tablespoons red wine vinegar

●     1 teaspoon salt

●     1 lemon, juiced

●     Lemon wedges, to serve

●     Cracked pepper, to taste

 

Method:

 

  1. Combine all the marinade/dressing ingredients in a shallow bowl. Pour half of the marinade into a large bowl and refrigerate the rest for later use as dressing.

  2. Place the Bad Hunter Lemon & Herb strips in the marinade in the large bowl and let it marinate for 15-30 minutes.

  3. While the protein is marinating, prepare all the salad ingredients and mix them in a large salad bowl.

  4. Heat oil in a large pan over medium heat. Add the lemon & herb strips and cook until golden. Remove from the pan and let rest for a minute.

  5. Arrange the lemon & herb strips over the salad. Drizzle the salad with the remaining dressing and serve with lemon wedges.
