Ingredients:
● 230g Bad Hunter Peri Peri plant-based chicken Strips (available in the frozen section of Woolworths)
● 3 potatoes, washed and chopped into pieces
● Cos lettuce, washed and roughly chopped
● Peri peri mayonnaise
Method:
Preheat the air fryer to 180°C and spray it with canola oil. While the air fryer is heating up, wash and chop the potatoes, then rinse, drain, and dry them before spraying with canola oil. Place them in the air fryer and cook for 10 minutes.
Roughly chop and wash the lettuce and place it in a bowl for later use.
When the air fryer timer goes off, turn the air fryer up to 200°C, spray the potatoes with canola oil, season with salt and pepper, and cook for another 5 minutes or until they are golden and crispy.
While the potatoes finish cooking, heat oil in a large pan over medium-high heat and add the Bad Hunter peri peri strips. Cook until they are golden and cooked through, then remove the pan from the heat.
In a bowl, place the washed and chopped lettuce, crispy potatoes, and peri peri strips.
Serve with a side of peri peri mayonnaise.
